Gatte ka Pulao

Ingredients - 

 

 For Gatte - 

 

  1. Gram Flour / Besan  – ¾ cup 

  2. Turmeric powder – ½ tsp

  3. Red Chilli powder – 1 tsp

  4. Coriander seeds powder – 1 tsp

  5. Cumin seeds – 1 tsp

  6. Ajwain – ¼ tsp

  7. Salt – ½ + 1 tsp

  8. Oil - 1 Tsp

  9. Water - ¼ cup + 2 cups

 

For Pulao - 

 

  1. Basmati Rice – 1 cup -  washed thoroughly 

  2. Potato – 1 -  diced

  3. Onion 1 - finely chopped 

  4. Vegetable oil - 1 TBSP

  5. Black Cardamom – 1

  6. Cinnamon – 1 inch

  7. Bay leaf – 1 leave

  8. Star anise- 1 

  9. Cloves – 2

  10. Black Pepper – 5

  11. Cumin seeds - 1 Tsp

  12. Turmeric powder - 1 Tsp

  13. Red chili powder - 1 Tsp

  14. Garlic – 8 to 10 cloves

  15. Green Chilli – 2, chopped

  16. Coriander seeds powder– 1 tsp

  17. Cumin powder - ½ Tsp

  18. Asafoetida – ¼ tsp

  19. Ginger paste – 1 TBSP

  20. Tomato (medium size) – 1, chopped

  21. Salt to taste 

  22. Coriander leaves (chopped)

Method - 

 

For Gatte - 

 

  1. In a mixing bowl , add besan , turmeric , red chili powder , coriander powder , cumin powder ,  salt to taste and mix well. 

  2. Add a little water at a time and knead into a semi soft dough. Take a lemon size ball of dough and roll it into a cylindrical shape.

  3. Heat 2 cups of water in a pot. Once water comes to boil , add the rolled dough balls to it. Cook for 5-6 minutes on medium heat. As the dough balls are cooked ,  they will float on water and bubbles can be seen on them. Remove them gently and keep them aside for later use.

 

For Pulao - 

 

  1. In a pot add 1 TBSP oil. Once hot , stir fry sliced potatoes , till they turn golden brown color ,  remove and keep aside for later use. After the potatoes , add the cooked gatte and stir fry them till they turn a nice golden color, remove and keep them aside .

  2. In the same oil add the whole masalas - whole black cardamom , cloves ,  black pepper , cinnamon stick ,  bay leaf  . Saute them just for 10-15 seconds. Add cumin seeds and hing powder.

  3. Add the chopped onion and green chilies. Saute till the onions turn translucent. Add garlic paste and saute for another minute. Add the fried potatoes , gatte and washed rice. Mix well. 

  4. Add the dry masalas turmeric powder , red chili powder , cumin powder , coriander powder , salt to taste and mix well. Add chopped tomatoes and give a quick mix. 

  5. Add 2 cups of water. Cover and cook for 8-10 minutes on medium heat till all the water is absorbed . Lower the flame and  simmer for another 10 minutes.
