Ingredients - 

 

  1. Rice - Basmati or long grain -  1 cup

  2. Carrots / Gajar - cut into small cubes - ½ cup

  3. Green peas - ½ cup

  4. Vegetable oil -  1 TBSP

  5. Black pepper cons - 1 Tsp

  6. Black cardamom - 1

  7. Star Anise - 1

  8. Cinnamon stick -  ½ inch -1 

  9. Bay leaf - 1

  10. Cumin seeds / Jeera - 1 Tsp

  11. Hing powder - ½ Tsp

  12. Green Chilies - slit in between - 2 -3 

  13. Salt to taste 

  14. Water  -  2 cups

Method - 

 

  1. In a heavy bottom pot , add vegetable oil. Once hot add black pepper cons , black cardamom , star anise , cinnamon stick , bay leaf , cumin seeds and hing powder. Saute together .

  2. Add carrots and green peas . Saute well for a minute. Add salt to taste and mix well.

  3. Add rice and mix well. Add water and get to a boil. 

  4. Cover and cook for 4-5 minutes on medium flame . After all the water is absorbed and rice is well cooked lower the heat and simmer on low flame for 8-10 minutes. Serve hot with a choice of raita or pickle.

Tips - 

 

  1. It is always better to soak your rice for 20 to 30 minutes before cooking. Soaking rice grains gives them a better texture when they are cooked. 

  2. For most rice varieties, the rice to water ratio is generally 1:2. However, this ratio can vary depending on the particular type of rice used or the cooking method used
