Dudhi Halwa  / Bottle Gourd Pudding

Lauki Halwa also called as dudhi halwa is a rich indian dessert traditionally  made with bottle gourd , milk and ghee. But this vegan , allergy friendly version is super delicious.

Lauki / bottle gourd - finely grated - 2 cups.

Almond milk or any other non dairy milk - ½ cup

Sugar - ½ cup

Almond flour - ¼ cup - Optional

Raisins - 1 TBSP

Cardamom powder - 1 TSP

Vegetable oil - 1 TSP

  1. In a pan heat oil on medium heat. Once hot add grated lauki. Saute for a minute or so. Add non dairy milk.  Close lid and cook on slow flame. Lauki leaves water when it starts cooking. Cook till lauki is well cooked and the mixture is dry .

  2. Add almond flour and mix well - This is optional if you want nut free then skip this step.

  3. Add sugar and mix well. Sugar will start melting.

  4. Add raisins and cardamom powder and mix well.

  5. Cook till mixture gets dry.

  6. Serve hot or if you like chilled dessert refrigerate halwa and enjoy.
