Vegan Dal Palak

Be it a cold wintery day or a busy work day , this quick, easy , healthy dish is my go to dinner option.

Ingredients

 

Toor Dal -  2 cups 

1 finely chopped tomato

1 bunch finely chopped palak/spinach

1 Onion finely chopped

2-3 garlic cloves crushed

Hing / Asafoetida - 1/2 Tsp

Turmeric powder - 1 Tsp

Cumin seeds -  1 Tbsp

Cumin - Coriander powder - 1 TSP

Red chilli powder - 1 Tsp

Vegetable oil - 1 Tbsp

salt to taste

water to adjust consistency.

Method

Insta Pot

1. Start Insta Pot on saute mode. Add oil.Once hot add cumin seeds , after they tamper add hing powder.

2. Add garlic. Once they are brown. Add chopped onion. Saute till they turn translucent. Add tomatoes. Saute till they are mushy. Add dry spices turmeric powder , cumin-coriander powder , red chili powder , salt to taste. Mix well.

3. Add spinach and mix well.

4. Add washed toor dal. Mix well.

5. Add water to adjust consistency. 

6. Switch to pressure cooker mode. Cook for 20 minutes. Let the steam release naturally.  Mix well. Serve Hot.

Kadai -  Pan

1. Wash the dal thoroughly , add 1/4 tsp hing powder , turmeric powder , cut spinach  2 cups water. Pressure cook for 3 whistles on medium flame.

2. For Tampering heat a pan on medium heat. Add oil. Once hot add cumin seeds , after they tamper add hing powder.

3.Add garlic. Once they are brown. Add chopped onion. Saute till they turn translucent. Add tomatoes. Saute till they are mushy. Add dry spices turmeric powder , cumin-coriander powder , red chili powder , salt to taste. Mix well.

4. Add boiled dal and spinach. Mix well. Add water if required to adjust consistency. Cook for another 5-10 minutes.

6. Serve with hot rotis or rice.
