Curd Rice

Ingredients

  1. Cooked rice - 1 cup

  2. Almond milk - plain - unsweetened - ¼  cup

  3. Almond yogurt - plain - ½ cup

  4. Vegetable oil - 1 Tsp

  5. Cumin seeds / Jeera - 1 Tsp

  6. Urad dal - 1 Tsp

  7. Hing powder - ¼ Tsp

  8. Curry leaves  -  3-4 

  9. Whole dried  red chillies - 3-4 

  10. Salt to taste

  11. Cilantro - finely chopped - for garnishing.

Method - 

  1. In a pan add cooked rice ,  almond milk and almond yogurt. Mix nicely. Add salt to taste , cilantro and mix well.

  2. For tempering - heat 1 Tsp oil , add cumin seeds ,urad dal ,  hing powder , curry leaves and red chillies. Mix well and add the tempering to rice. Mix well . Serve chilled with a side of pickle and papad.
