Ingredients - 


  1. Baby corns 

  2. Capsicum - cubed - 1 cup

  3. Spring onions - finely chopped  - ½ cup

  4. Onion - finely chopped  - 1

  5. Garlic - finely chopped  - 1 TBSP

  6. Ginger - finely chopped - 1 TBSP

  7. Green chilies - 3-4 

  8. Soy sauce  - 2 TBSP

  9. Vinegar - 1 TBSP

  10. Red chili sauce  - 1 TBSP

  11. Corn flour - ½ cup + 2 TBSP

  12. Rice flour - ¼ flour

  13. Black pepper powder - 1 Tsp

  14. Sugar - ½ Tsp 

  15. Water - 8 cups 

  16. Salt to taste

Method - 


  1. Cut the baby corn in 4 parts. Boil water in a pot. Once hot, add ½ Tsp salt and baby corn. Let the corn cook for 4-5 minutes. Once cooked, remove the corn from the water. Drain the excess water and keep it for later use. Let the corn cool down. 

  2. Add ½ cup corn flour,  ¼ cup Rice flour, salt to taste, black pepper powder to the cooked corn. Mix well. Add water as needed and make a slurry-like consistency. 

  3. Heat vegetable oil in a kadai. Once hot, add the corn to the oil. Fry on medium heat till they turn nice crispy and golden color. 

  4. In a pan, add 1 TBSP vegetable oil. Add onions and saute for a minute. Add chopped garlic and ginger and saute for another minute. Add chopped capsicum, and half of the cut spring onions. Saute for 2-3 minutes. Add red chili sauce, soy sauce, salt to taste and mix well. Add ½ cup to 1 cup water.

  5.  In a bowl add 2 TBSP corn flour and 4-5 TBSP water, mix well and make corn flour slurry. 

  6. Add the slurry to the chili mixture.  Mix well and cook well till you get a thick sauce consistency.  Add the fried baby corn and give it a quick mix. Do not overcook as the corn will get soggy.

  7. Garnish with red chilies and remaining spring onion and serve hot.
