Vegan Coconut Rice / Narali Bhat

Traditionally cooked with ghee (clarified butter ) , this recipe is equally yummy and healthy in Vegan version as well.

Basmati rice or ambemohar rice -  2 cups

coconut milk - 4 cups

Jaggery - crushed or grated - 2 cups

cloves -  2-3 pieces

caramom powder -  1 Tsp

vegtable oil - 1 TBSP

raisins - 1TBSP

salt - 1/4 tsp

Garnishing - 

freshly grated coconut

almond slices


1. In a saucepan add oil. Once warm add the cloves. Saute for a minute

2.  Add Rice and saute nicely.

3. Add coconut milk and salt. mix well. Cover with a lid and let the rice completely cook. Takes around 15-20 minutes.

4. Add jaggery , caramom powder , raisins , almond slices (optional).

5. Mix well. Be carefull not to break the rice grains. Cover and cook for another 10-15 minutes.
