Chili Noodles

Ingredients  - 

 

  1. Noodles  -  1 pack -  You can use Gluten Free Noodles for gluten free option 

  2. Capsicum - finely sliced - 1 cup

  3. Spring onions - finely chopped  - ½ cup

  4. Onion - finely sliced - 1

  5. Garlic - finely chopped  - 2 TBSP

  6. Red chili - 4-5 

  7. Soy sauce  - 2 TBSP

  8. Vinegar - 1 TBSP

  9. Water - 8 cups 

  10. Salt to taste 

  11. Vegetable oil

Method -  

 

  1. Chili Paste -  Soak 3-4 Whole dried red chilies in water overnight. Remove the excess water and grind the chilies into a paste.

  2. To boil noodles - add water , 1 Tsp salt and 1 Tsp oil to a pot. Let the water come to a boil. Add noodles and mix well. Let the noodles cook till they are just cooked or have a bite to them . Drain the excess water and wash the noodles with cold water . Keep them aside.

  3. Heat a wok on high heat . Add oil , garlic , whole red  chili and sliced onions. Saute well for just a minute.

  4. Add all the veggies , save some spring onion for garnishing . Saute all the vegetables. Add  salt to taste , black pepper powder , soy sauce , vinegar and mix well.

  5. Add cooked noodles and mix well. Toss on high flame for a couple of minutes.

  6. Garnish with spring onions and serve hot with a side of chilli sauce .
