Ingredients For Butternut Squash Bharit
- Butternut Squash – Peeled and cut into small cubes – 1 Cup
- Vegetable oil – 1 Tsp
- Cumin seeds – 1 Tsp
- Hing powder – ¼ Tsp
- Green chillies – finely chopped – 3-4
- Curry leaves – 4-5
- Salt to taste
- Cilantro – finely chopped – for Garnishing.
Method
- Steam the butternut squash cubes in a pressure cooker for 3 whistles. Let the pressure release naturally. Smash the butternut squash using a potato masher.
- In a small kadai , heat 1 Tsp of oil. Once hot , add cumin seeds , hing powder , Finely chopped green chilies , curry leaves.
- Add the hot tempering or tadka to mashed butternut squash. Add salt to taste and mix well. Garnish with finely chopped cilantro . Serve hot with Roti.
