Ingredients For Vegan Bhindi Do Pyaza

  1. Bhindi / Okra – Small -15-20
  2. Vegetable Oil – 2 TBSP
  3. Cumin seeds – 1 tsp
  4. Cinnamon – ½ inch
  5. Black pepper cons – 5-6
  6. Green cardamom – 2-3
  7. Hing Powder – ½ Tsp
  8. Onion, chopped – 1
  9. Red chilli powder – 1 Tsp
  10. Coriander powder – 2 Tsp
  11. Turmeric powder – 1 Tsp
  12. Tomatoes, chopped – 2
  13. Ginger – ½ inch
  14. Garlic – 3-4 pods
  15. Salt to taste
  16. Water – ¼ cup
  17. Black cardamom – 2-3
  18. Onion, diced 1
  19. Small whole Lady finger – 15-20
  20. 1 tsp Ginger-Garlic paste
  21. Salt to taste
  22. Coriander leaves, chopped – for Garnishing

How To Make Bhindi Do Pyaza. Step By Step Instructions

In a kadai, heat oil and add cinnamon, cumin seeds, black peppercorns, and green cardamom. Let them crackle. Then, sauté onions until they turn light golden brown. Incorporate ginger-garlic and sauté for an additional minute.

Next, add chopped tomatoes and sauté until they turn mushy. Introduce red chili powder, coriander powder, and turmeric powder. Sauté for another minute. Pour in some water, bring it to a boil, and turn off the flame. Allow the mixture to cool down.

Once cooled, grind the mixture into a fine paste and keep it aside for later use.

In the same kadai, heat oil and add black cardamom, onions, and ladyfinger (okra). Sauté for 4-5 minutes or until the ladyfinger is cooked. Add salt and the prepared gravy. Sauté and cook for about a minute. Finish the dish with freshly chopped coriander leaves.
