Ingredients  - 


 

  1. Bhindi / Okra - Small -15-20 

  2. Vegetable  Oil   - 2 TBSP

  3. Cumin seeds   - 1 tsp 

  4. Cinnamon  -  ½ inch

  5. Black pepper cons   - 5-6

  6. Green cardamom   - 2-3

  7. Hing Powder - ½ Tsp 

  8. Onion, chopped - 1

  9. Red chilli powder - 1 Tsp

  10. Coriander powder - 2 Tsp

  11. Turmeric powder - 1 Tsp

  12. Tomatoes, chopped - 2

  13. Ginger - ½ inch

  14. Garlic - 3-4 pods

  15. Salt to taste

  16. Water - ¼ cup

  17.  Black cardamom - 2-3

  18. Onion, diced 1

  19. Small whole Lady finger - 15-20

  20. 1 tsp Ginger-Garlic paste

  21. Salt to taste

  22. Coriander leaves, chopped - for Garnishing

Method - 

  1. In a kadai heat oil and add cinnamon , cumin seeds, black pepper cons, green cardamom and let them crackle. Then add onion saute it until light golden brown. Add ginger garlic and saute for another minute.

  2. Add chopped tomatoes and saute till they turn mushy. Now add red chilli powder, coriander powder, turmeric powder saute for a minute.

  3. Add some water, bring it to a boil and switch off the flames and let it cool down properly. Once cooled grind it into a fine paste and keep aside for further use.

  4. In a kadai heat oil and add black cardamom, onion, lady finger and saute for 4-5 minutes or until cooked.

  5. Now add salt and add the prepared gravy saute and cook it until a minute then finish with coriander leaves. Serve hot.

Tips - 

  1. With the same gravy you can prepare multiple dishes like Aloo do pyaza , Tofu do pyaza etc.

  2. Always rinse the okra first and then wipe them dry and then chop them. If you just wash them and then chop them they become sticky, while chopping itself. Even while cooking them, they become slimy and mushy.

  3. I have not covered the pan in this recipe as I do not want the bhindi do pyaza to be slimy and sticky.
