Baingan Bharta / smashed eggplant

Bharta -  Indian dish of vegetables( like eggplant ,  tomato , pumkin etc) usually roasted and smashed and then cooked with a dash of spices. Among all the options presented , baingan or eggplant bharta is the most craved for.

Ingredients -

  1. Eggplant - 1 medium size

  2. Onion - finely chopped - 1

  3. Tomato - finely chopped - 2

  4. black mustard seeds - 1 Tsp

  5. cumin seeds - 1 Tsp

  6. Hing powder - 1/4 Tsp

  7. Turmeric powder - 1 Tsp

  8. Red Chilli powder - 1 Tsp

  9. Garam masala - 1 Tsp

  10. Vegetable Oil - 1 TBSP

  11. Salt to taste.

Method -

  1. Rinse the eggplant and pat dry. Brush it with little oil all over. Then make few slits all over the eggplant with a knife. Put the eggplant directly on heat and roast, turning often for around 10-12 minutes until completely roasted.

  2. Once roasted (to check if its done, insert a knife inside the eggplant, it should go easily) use a pair of tongs to remove the eggplant from heat and keep it covered with a tight lid

  3. Once cooled, remove the skin . Mash the eggplant using a fork or potato masher. Make sure there are no big lumps.

  4. Heat a Pan on medium flame. Once hot add oil.

  5. Once the oil is hot add mustard seeds. Once they splutter , add cumin seeds and hing powder.

  6. Add Onions and saute till they turn translucent.  

  7. Add chopped tomatoes and saute till they turn mushy.

  8. Add turmeric powder , chilli powder, garam masala , salt to taste. Mix well and saute for another 2-3 minutes.

  9. Add mashed eggplant and mix well.

  10. Cover and let it cook for another 5 minutes.

  11. Garnish with finely chopped cilantro and serve hot with roti.
