Apple Crumble Muffin

Ingredients - 

 

  1. All purpose flour / Maida - 1 cup

  2. Baking powder - 1 Tsp

  3. Baking Soda  - ½ Tsp

  4. Cinnamon powder - 1 + ½ Tsp

  5. Sugar -  1 cup

  6. Vegetable oil - ¼ cup

  7. Almond or non dairy milk - ½ cup

  8. Apple sauce - ¼ cup

  9. Vanilla essence - 1 TSP

  10. Apple - cut into pieces - 1 cup

  11. Corn flour - 5 TBSP

  12. Brown Sugar - 3 TBSP

  13. Vegan butter - 1 TBSP

Method 

 

  1. Mix the dry ingredients, all purpose flour , baking powder , baking soda , cinnamon powder . Sieve them through a sieve to make sure there are no lumps.

  2. Mix the wet ingredients: apple sauce , sugar , vegetable oil , almond or non dairy milk . blend them together using a hand blender.

  3. Add dry ingredients to the wet ingredients and again blend with hand blender for just a minute or so , just to make sure there are no lumps. Do not over blend or else the cake gets less softer. 

  4. Add apple pieces and vanilla essence and mix well.

  5. Crumble : Add corn flour , brown sugar , vegan butter and cinnamon powder and mix well. 

  6. Take a muffin pan and line it up with  paper cups. Scoop your muffin batter in the cups. Add TBSP crumble on the top.

  7. Preheat the oven at 350 deg Fahrenheit or 180 deg Celsius. Bake muffins for 20 - 25 minutes in the preheated oven or until a skewer inserted into the muffin comes clean.
