Anjeer Phirni

Ingredients - 

 

  1. Rice- Ambemohar/ Basmati  - 1 TBSP

  2. Water - 1 cup

  3. Almond Milk / Any non dairy milk - 3 cups

  4. Sugar - 2 TBSP

  5. Charoli -  ½ TBSP - Optional 

  6. Cardamom powder - ½ TSP

  7. Dry Anjeer / Figs - 4-5 pieces

Method - 

  1. Rice - Wash rice . Soak in water and keep aside for 30 minutes. Remove the water from rice. Grind the rice into a coarse texture.

  2. Anjeer / Figs - Soak 4-5 pieces of dry anjeer in water for 4-5 hours or overnight. Remove the anjeer pieces from water and grind them into a puree. 

  3.   Add the milk to a pan and get it to a nice boil. Add the grinded rice to the milk.  Mix well. Cook till the rice is fully cooked. Keep on stirring in between . Make sure the Rice does not stick to the bottom. Add sugar and mix well. Cook for another 3-4 minutes. Keep stirring.

  4. Add Anjeer puree and mix well. Make sure there are no lumps.

  5. The fun part about this recipe is it can be served hot as well as cold. In both cases it tastes amazing.
