Achari Aloo Paratha

Ingredients - 

 

For Stuffing - 

 

  1. Potato - boiled - 1 

  2. Cilantro - finely chopped 

  3. Turmeric powder - ½ Tsp

  4. Red chili powder  - 1 Tsp

  5. Achari masala powder - 1 Tsp

  6. Salt to taste .

 

For Dough - 

 

  1. Whole wheat flour -  1 cup

  2. Salt to taste .

  3. Ajwain - ¼ Tsp 

  4. Water as needed . 

  5. Vegetable oil - 1 Tsp.

 

For Paratha - 

 

  1. Mango Achar

Method - 

 

For Stuffing - 

 

  1. In a bowl add boiled potatoes and smash them.  Add cilantro , turmeric powder , red chili powder ,achari masala ,  salt to taste and Mix well.

  2.  

For Dough - 

 

  1. Add ½ cup whole wheat flour and add water as needed and knead a soft dough. Apply some vegetable oil to the dough , cover and rest for 10-15 minutes.

 

For Paratha - 

 

  1. Take a lemon size ball of dough. Roll it into a circle of around 4 inches diameter.  Apply 1 Tsp Mango achari masala . and spread it across. 

  2. Take a lemon size ball of stuffing. Put it in the middle and collect all the edges and seal them. Roll the paratha gently .

  3. Dry roast the paratha on a griddle/skillet/non-stick pan on medium heat.

  4. Then flip and apply little oil or butter on both sides, and cook till both sides are golden brown .

  5. Serve hot with chutney  or roll and pack for lunch.
