 Ingredients: For vegan 10 vegetable soup recipe

  • Potato – finely chopped – ½ cup
  • Corn kernels – ½ cup
  • Capsicum / Green bell pepper – finely chopped – ½ cup
  • Edamame beans – ½ cup
  • Beetroot – finely chopped – ½ cup
  • Green peas – ½ cup
  • Spinach – finely chopped – ½ cup
  • Carrots – finely chopped – ½ cup
  • Tomato puree – ½ cup
  • Onion – finely chopped – ½ cup
  • Ginger – garlic – finely chopped – 1 Tsp
  • Vegetable oil – 1 Tsp
  • Fresh basil – finely chopped – 1TBSP
  • Oregano- 1 Tsp
  • Thyme – 1 Tsp
  • Salt to taste.
  • Water – 2 cups

How to Make gluten-free 10 vegetable soup recipe Step-by-Step Instructions

  1. In a pot add vegetable oil and finely chopped ginger and garlic. Give a quick stir and add onions. Saute for just about a minute.
  2. Add all the other vegetables , salt to taste and water. Mix well. Cover and cook on medium flame for 10-15 minutes. Add additional water if required to maintain the soup consistency.
  3. Add fresh basil , Thyme and oregano and mix well. With the help of a hand blender , grind the mixture into a coarse soup. This gives the soup a nice bite like structure .
  4. Serve hot with a side of garlic bread or bread stick.
