- Potato – finely chopped – ½ cup
- Corn kernels – ½ cup
- Capsicum / Green bell pepper – finely chopped – ½ cup
- Edamame beans – ½ cup
- Beetroot – finely chopped – ½ cup
- Green peas – ½ cup
- Spinach – finely chopped – ½ cup
- Carrots – finely chopped – ½ cup
- Tomato puree – ½ cup
- Onion – finely chopped – ½ cup
- Ginger – garlic – finely chopped – 1 Tsp
- Vegetable oil – 1 Tsp
- Fresh basil – finely chopped – 1TBSP
- Oregano- 1 Tsp
- Thyme – 1 Tsp
- Salt to taste.
- Water – 2 cups

- In a pot add vegetable oil and finely chopped ginger and garlic. Give a quick stir and add onions. Saute for just about a minute.
- Add all the other vegetables , salt to taste and water. Mix well. Cover and cook on medium flame for 10-15 minutes. Add additional water if required to maintain the soup consistency.
- Add fresh basil , Thyme and oregano and mix well. With the help of a hand blender , grind the mixture into a coarse soup. This gives the soup a nice bite like structure .
- Serve hot with a side of garlic bread or bread stick.
